Can Sauerkraut Be Frozen? What Really Happens to the Live Cultures
A woman once asked me at our farmers market booth, holding three jars of our Original Kraut as if she'd just adopted them. "I love these, but I can't eat them fast enough. Can I freeze them?" It's a question I get a lot, and the honest answer is more interesting than a simple yes or no. So let me walk you through what actually happens when you put a living food into a freezer — what you keep, what you lose, and what I'd quietly do instead.
Because here's the thing about our sauerkraut: it isn't a static product sitting on a shelf waiting to be eaten. It's alive. We ferment it slowly in stainless steel fermenters for four to six weeks, never in plastic, and by the time it reaches you, it's full of beneficial microorganisms still doing their quiet work. Freezing a living food is a different decision than freezing a loaf of bread. Worth understanding before you do it.
The Short Answer
Yes, you can freeze sauerkraut. It won't come back fresh and crunchy like before you froze it. But it won't become unsafe, it won't spoil in any dangerous way, and you can absolutely thaw it and eat it months later. The acidity that makes kraut kraut — all that lactic acid the bacteria produce — is a fantastic preservative on its own. Freezing on top of that is belt-and-suspenders safe.
But "safe to eat" and "the same food you started with" are two different standards. When people ask me if they can freeze it, what they usually mean underneath is, "Will it still be good for me?" And that's where I want to slow down and be honest with you.
What Freezing Does to the Live Cultures
Our kraut is valuable to a lot of people precisely because it's raw and full of live lactic acid bacteria. These are the same families of beneficial microorganisms that researchers study for their role in gut health. A study of organic artisanal sauerkraut published in Frontiers in Microbiology in 2022 found these bacteria living in the brine at very high levels — around 7 to 8 log CFU per milliliter, which is a scientist's way of saying "a whole lot of them."
Freezing doesn't sterilize that. But it does take a toll. When water freezes, it forms sharp ice crystals, and some of those crystals puncture bacterial cells. The bacteria that supplement companies freeze on purpose are protected with special cryoprotectant compounds and flash-frozen in controlled labs for exactly this reason. Your home freezer is slower and has none of that protection. So some of the live culture will not survive the trip. How much? It varies by strain and by how fast your freezer works, and I'm not going to pretend there's a tidy percentage, because the honest answer is that it depends, and nobody has measured your specific jar.
What I can tell you plainly is this: freezing reduces the live, active cultures. It doesn't eliminate them, but it knocks them back. If the living bacteria are your main reason for eating sauerkraut, the freezer is working against you.
Freezing won't make your kraut unsafe. It'll just make it a little less alive — and a little mushier.
What Actually Survives the Freezer
Now for the good news, because it's not all lost. A surprising amount of what's valuable in sauerkraut comes through freezing just fine.
The fiber is untouched. Frozen, thawed, cooked — it doesn't matter. Cabbage fiber is cabbage fiber, and it still feeds the good bacteria already living in your gut.
The bioactive compounds hold up well, too. When cabbage ferments, it creates a family of plant compounds with names like ascorbigen and isothiocyanates. Polish researchers studying stored fermented cabbage found that ascorbigen is remarkably stable in the acidic environment of sauerkraut, holding steady even through prolonged storage. These compounds are part of why fermented cabbage gets studied as a functional food in the first place, and they're tougher than the bacteria.
So if you freeze our kraut, you keep the fiber, you keep most of those bioactive plant compounds, and you keep the tangy flavor. What you give up is some of the living culture and, as I'll get to, some of the texture.
Why Mine Stays in the Fridge
I'll tell you what we do in our own house. We don't freeze it. We keep it in the refrigerator, in glass, and we eat from it steadily.
Two reasons. First, refrigeration keeps the live cultures alive and happy without the ice-crystal damage. Cold slows the bacteria down to a gentle crawl, which is exactly what you want once the ferment is where you like it. That same 2022 research showed the bacterial populations staying robust through cold storage. The fridge is a pause button, not a kill switch.
Second — and this matters to me more than people expect — freezing usually means plastic. Most folks reach for a freezer bag or a tub, and that's the opposite of everything we stand for. We're the only fermentation brand I know of that's plastic-free from the fermentation all the way through the packaging. We use glass jars and stainless steel vessels because we don't want our living food sitting against plastic, leaching who-knows-what, for weeks. Moving it to a plastic freezer bag to "preserve" it always struck me as solving one problem by creating another.
How Long It Actually Keeps
Here's the part that might make the whole question go away: real, raw, fermented sauerkraut lasts a long time in the fridge. Years, in fact. The acidity is a natural guardian. As long as the kraut stays submerged under its brine and you're using a clean fork, an opened jar of ours will happily keep for many months refrigerated, and an unopened one for a good long while after that.
So before you clear out freezer space, ask yourself whether you actually need to. A lot of the time, the answer is that your kraut will outlast your worry. Keep it cold, keep it under the brine, and let time be on your side.
If You're Going to Freeze It Anyway
Sometimes the answer really is yes. Maybe you found an incredible deal, maybe you made a giant batch at home, maybe you're heading out of town. No judgment. If you're going to do it, do it well.
Drain off some of the brine into a separate jar first — but don't toss it. That brine is full of the very bacteria and bioactive compounds we've been talking about, and you can keep it in the fridge to splash into dressings or sip as a tonic. Pack the kraut into a freezer-safe container, ideally glass with a little headroom so it has room to expand, and press it down so there's as little trapped air as possible. Freeze it in smaller portions than you think you'll need, because you can't really refreeze it once it's thawed.
When you want it, move a portion to the fridge and let it thaw slowly overnight. Don't microwave it to speed things up. Heat is far harder on the live cultures than cold ever was, and you'd be undoing the one thing you were trying to protect.
One honest heads-up on texture: thawed kraut is softer. The crunch we work so hard for during that slow four-to-six-week ferment doesn't fully come back after freezing, because those same ice crystals that nick the bacteria also break down the crisp structure of the cabbage. It'll still taste great. It just won't snap the way fresh-from-the-fridge kraut does. For that reason, I think frozen kraut is best saved for cooked dishes where softness doesn't matter anyway.
A Simple Way to Use Thawed Kraut
If you've got thawed, softer kraut on your hands, lean into it instead of fighting it. Here's what I make.
Recipe: Skillet Kraut and White Beans
Ingredients
- 1 cup thawed Local Culture sauerkraut, lightly drained
- 1 can white beans, rinsed
- 1 small onion, sliced thin
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- A handful of fresh parsley or dill
- Black pepper
Steps
- Warm the olive oil in a skillet over medium heat. Add the onion and cook until soft and golden, about 8 minutes.
- Add the garlic and cook for one more minute.
- Stir in the white beans and warm them through.
- Turn off the heat, then fold in the thawed sauerkraut. Adding it off the heat keeps things from getting too hot too fast.
- Finish with fresh herbs and black pepper. Eat it as is, or pile it on toast.
A note: gently warming kraut at the end like this will still mellow some of the live cultures, since heat is hard on them. If you want the full live benefit, eat your kraut cold and raw, and use the cooked dishes for the thawed, softer stuff. That's the trade I make, and I make it gladly.
